What to expect
Plain text is the most portable format there is: no fonts, no layout, just the words. It's the right choice for feeding a document into a translation tool, a search index, an AI assistant or a script, or for copying passages without the formatting mess that comes from copying straight out of a PDF viewer.
Pages are separated by a blank line and line breaks follow the original layout. Text is saved as UTF-8, so accents and non-Latin scripts come through as long as they were real text in the PDF.
If the result is empty, your PDF is probably a scan: the pages are pictures of text. Run OCR first and then extract the text.

Why is my text file empty?

Does it keep accents and other languages?
Yes. The file is saved as UTF-8, so accented letters and non-Latin scripts are kept as long as they were real text in the PDF.
Will tables survive?
Table cells come through as text on their lines, but the grid itself is lost. For tables, PDF to Excel is the better tool.
